A few weeks ago, at the farm in France, we had a big beet harvest. I remember my sister making the most amazing chocolate beet cake a few years ago so I decided to give it a go, even though the idea really intimidated me. The recipe is originally from Tender by Nigel Slater, a gorgeous book, I highly recommend perusing, if not just for the stunning photographs. I used this version from David Lebovitz. I didn’t have cocoa, espresso, or really measure anything but it turned out amazing! I added extra chocolate. I topped it with creme fraiche and it was just heavenly! I am not usually a cake person but this one is more like a pudding! Try it if you get the chance.

Oh Chelsea!!! I love beets and cannot wait to try this cake,although I do not usually eat sweets except for fruit and chocolate… I have been buying beautiful orange and yellow beets from Peoples co-op and New Seasons, cooking them, slicing and marinating in apple cider vinegar (with a smidge of their cooking juices) for an easy-breezy way to enjoy them in salads and on their own with some wonderful “stinky” French cheese!
