For two days, I’ve been craving a Ruben Sandwich (so much for the trying to be a Flexitarian thing). I am hoping to remedy my craving at Kenny and Zuke’s this weekend. It’s supposed to be Portland’s new answer for a New York style deli and has become one of my favorite eating spots. They have one of the best Rubens. They also happen to be participating in The Tap Project going on all around the country next week (go to the site to find out your local participants). Basically you pay a $1 for water you would normally get for free and this donation goes to help give clean water to underprivileged kids throughout the world. I know I seem to be all about causes today! I really just think this will be a fabulous justification for me to eat out all next week:) Thanks for the heads up Ansley and Lizzy.
Reubens are amazing and can foil even experienced meat-avoiders. But there is another option: grilled or baked tempeh makes a great corned beef stand in. If you google “tempeh reuben” you’ll come up with a ton of good tempeh recipes.
